Chicken filo pastry recipe

 


Apricot chicken filo pastry is one of my favourite comfort meals and it is surprisingly easy to make. 


chicken breast or tenderloins
dried apricots 
cream cheese 
filo pastry 
olive oil
apricot jam

Dice up your chicken and apricots I like to use about half a bag of dried apricots but you can experiment until you find the perfect amount for yourself. 


Use the olive oil in a pan and cook the chicken completely. 


Mix the cream cheese (I use 2 pots of it) and half a jar of apricot jam together. Add the cooked chicken and the cut up apricots and mix. 


Fill up the filo pastry with the mixed goodness and cook in the oven until the filo pastry is golden and enjoy.
